My whole life I’ve never really liked eggs. About a month ago, a guy offered to make me breakfast tacos. I let him. Mostly because I have a crush on him, but also because I was curious what he’d make me.
‘Just scrambled eggs, a little cheese and hot sauce on a warmed tortilla.’
I let him make me one, just in case. But to my relief, I didn’t hate it.
A couple weeks later, I found myself at the Mill in San Francisco. I was leaning into the tourism of it all, and decided to try one of their best-sellers, The Egg in the Hole. Felt pretty off-brand for me, kind of illegal.
Country bread w/ an egg, garlic + sage compound butter, salt + pepper. Insane umami. So rich, it’s like having cacio e pepe for breakfast, but delicious nonetheless.
From then on, I decided to embrace the egg. I got a bowl from Yo También Cantina the next day that had a jammy egg, which I also liked. During that whole meal, all I could think about was grabbing some eggs on my way home so I could learn to cook them. What has gotten in to me?
People were shocked I hadn’t cooked an egg before — but I didn’t like them! Why bother?
Actually, a couple years ago, I was going to have a friend teach me how to make a french omelette. I thought it would be an impressive skill to whip out the morning after. But then he pointed out I should learn to make something I’d actually enjoy… He had a point. HEARD, CHEF.
But everything is different now.
So, I walked up Lombard with my first ever carton of eggs, watched a handful of youtube videos, taking note of a few viral hacks from tiktok, and some tips from Julia Child.
I made several soft boiled eggs at varying cook times — decided I liked 6.5 minutes best. Feeling confident, I moved on to poached eggs.
I’ve started most mornings with eggs ever since. I began to question whether this out of the blue craving meant something else.
Was I excited to make them? Or excited to eat them? Either way, my world has expanded.
I’m still on my french omelette journey. Might have to get a new pan.
Or at least that’s what I’m blaming it on for now…
